1 tsp. baking powder
stick unsalted butter
1 1/4 c. granulated sugar
1 1/2 tsp. vanilla extract
You also need: a cookie press with decorative disks, colored decorating sugars and nonpareils
- Heat oven to 350°F.
- Pulse cooled nuts and 1/4 cup flour in food processor until finely ground. Whisk nut mixture, remaining flour, baking powder and salt in a bowl to mix.
- Beat butter, sugar, egg and extract in a large bowl with mixer on high speed until fluffy. On low speed, gradually beat in flour mixture until a soft dough forms. Divide in fourths. Do not chill.
- Following manufacturer's instructions, place dough into cookie press and press out cookies about 1 in. apart on ungreased baking sheet(s). (Change disks for different shapes.) Sprinkle with sugars and nonpareils.
- Bake 10 to 12 minutes until golden at edges. Cool slightly on sheet on a wire rack, then transfer to rack to cool completely.
